In short

Almawarid is Algerian software for pastry shops with a lab, a display counter, a tea room and a till: production in the lab with the real cost of every batch (ingredients, team hours, lab overheads), a touchscreen till and evening closing, table service, cake orders with a pick-up date, stock by location and transfer notes from the lab to the shop, purchasing, time clock and Algerian payroll. It runs in Arabic and French, is paid yearly in dinars, also works without Internet on Windows, and its data is hosted in Algeria.

Your day, in three moments

Morning · the lab
  • The head pastry chef starts the batches: ingredients leave the stock, cakes come in.
  • Team hours, taken from the time clock, go into the cost of each batch.
  • Cakes go to the display counter and the cold rooms, with their transfer note.
  • The head chef sees what to produce, worked out from your sales.
  • Each lab station receives its batches on its screen.
Daytime · counter, tea room, till
  • Waiters take the order at the table, on a phone.
  • Each order goes to the right station: bar, kitchenette, display counter.
  • The till takes the payment, the stock follows on its own.
  • The last slice is never sold twice.
Evening · you, the manager
  • The day's takings, till by till, with the cash count.
  • What was produced, sold and lost.
  • What is left on the display counter and in the cold rooms.
  • Your margin for the day, on a cost of sales counted only once.

Production in the lab

Each batch takes its ingredients out of stock, brings the cakes in and carries its real cost.

Lab batches

Each batch takes the ingredients out of stock and brings the finished cakes in.

The real cost of each batch

Ingredients actually used, team hours and lab overheads, worked out for you.

Team hours

The lab time clock feeds the cost of what is produced; you share the hours out between batches.

Your recipes, layer by layer

The cream, the base, then the entremets: one recipe holds others, with the cost price of the whole cake and of a slice.

The chef's technical sheet

Ingredients, sub-recipes, yield and method, printed in French or in Arabic.

What to produce tomorrow

Worked out from your sales on the same weekdays, starting with what is waiting in the cold rooms.

A screen for each lab station

Each pastry cook sees the day's batches; the scale fills in the quantities.

Selling at the till and at the table

Accurate sales, at the counter as at the table.

The touchscreen till

Receipt, cash or card payment, and till closing every evening with the count and the difference.

Tables and the tea room

The waiter takes the order at the table and sends it to the right station: bar, kitchenette, display counter. Each station sees it on its screen and marks it “ready”.

Stock that follows each sale

Every sale at the till takes the cake out of the shop's stock.

Refunds under control

A refund at the till goes through the manager, unless you allow the cashier to do it.

The last slice is never sold twice

What is ordered at a table is set aside at once.

The manager's code to cancel

To cancel a dish or a table, you decide whether a supervisor's code is required.

Your customers' orders

Weddings, parties, made-to-order cakes: every order is recorded, dated and tracked.

The order with its pick-up date

The customer, their phone number, the cake and the pick-up or delivery date: all recorded in one place.

Tracking for your customer

The order ticket carries a QR code: your customer sees where their order stands.

The cake set aside on confirmation

What is promised to a customer never goes on display.

The order sent to the lab

The order becomes a batch in the lab, on the right date.

Delivery from the lab to the shop

The lab, the cold rooms and the display counter know what leaves, what arrives and what is left.

Your stock locations

Lab, cold rooms, display counter: the stock of each location, kept separate, with the person in charge.

The signed transfer note

Every shipment from the lab to the shop has its numbered note, printed to be signed on departure and on arrival.

The temperature log

Cold rooms, freezers, display cases: the morning and evening reading, compliant or not, with the corrective action and the name of whoever entered it.

Losses, with their reason

Breakage, expiry, internal use: every loss leaves the stock with its reason and the name of whoever recorded it.

The counter asks, the lab prepares

The shop asks for what is missing; the lab gets its list to prepare.

Nothing gets lost on the way

What leaves and what arrives are counted; any gap is reported under a name.

Frozen cakes, tracked

Frozen with its use-by date, thawed with a new short date; never refrozen.

Purchasing and suppliers

You buy at the right time, and every invoice goes in without retyping.

Orders and receipts

The purchase order, the receipt into stock, what you owe and the payments of each supplier.

The supplier invoice from a photo

A photo of the invoice prepares the purchase and the stock entry; nothing is saved until you confirm.

What to order

The list of ingredients to buy again, worked out from what you use over thirty days.

Bought by the sack, used by the kilo

Flour bought in sacks goes into stock by the kilo, at its real cost.

The purchase order by WhatsApp

Sent to the supplier in one tap, by WhatsApp or by e-mail with the PDF.

Rising prices

Butter, sugar, semolina: you see the rise and its effect on the cost of each cake.

Organising your teams

Each person has a login in their own name and only sees what concerns them. Here is a typical set-up, to be adjusted to your actual roles.

Time clock

Everyone clocks in and out; lab hours go into the cost of the batches.

Algerian payroll

Payslips with CNAS and IRG, DAC and DAS returns.

  • Each stock location has its manager, who sees only their own locations.

Frequently asked questions

How do I work out the cost price of a cake?

Every batch recorded in the lab works out its real cost: ingredients taken out of stock, team hours from the time clock and lab overheads. The cost of each cake produced follows from it.

Does the software handle a tea room's till?

Yes. The touchscreen till takes payments at the counter; waiters take orders at the table and send them to the right station (bar, kitchenette, display counter); every till is closed at night with the cash count and the difference.

How do I keep track of cake orders for weddings and parties?

Every order carries the customer, the cake and the pick-up or delivery date. Its ticket carries a QR code: your customer sees where their order stands.

Can I track the stock of the lab, the cold rooms and the display counter separately?

Yes. Each location has its own stock and person in charge. A shipment from the lab to the shop goes through a numbered transfer note, printed to be signed on departure and on arrival.

Will my staff see my purchase prices and margins?

No. Each product's purchase price and margin are shown to the manager only. Every employee has their own login, and every loss carries its reason and the name of whoever recorded it.

What is the difference between Almawarid and Quantara?

According to the publisher's website, consulted on 23/10/2026, Quantara is French software for food trades, sold in euros per month by number of workstations; neither a till nor payroll is presented there. Almawarid brings together the lab, the till, the tea room, orders, purchasing and Algerian payroll, in Arabic and French, with an annual subscription in dinars and data hosted in Algeria.
